Double Chocolate Pie -- AllRecipes.com 4.6/5.0


This chocolate pie is delicious.  It has a strong chocolatey flavor and a consistency slightly firmer than most puddings.

Ingredients:

  • 9" pie crust banked (I prefer a chocolate crust)
  • 1 1/2 cups White Sugar
  • 1/3 cup Cornstarch
  • 1/2 teaspoon salt
  • 3 cups Milk
  • 3/4 cups Semi-sweet chocolate chips
  • 1 ounce (two squares usually) unsweetened baking chocolate chopped
  • 4 egg yolks
  • 1 Tablespoon vanilla extract
Steps:
  1. Bake pie shell.
  2. Combine 1 1/2 cups sugar, 1/3 cup cornstarch and 1/2 teaspoon salt in a 2 quart sauce pan.
  3. Stir in 3 cups of milk, gradually.
  4. Add 3/4 cups chocolate chips and 1 ounce of chopped unsweetened chocolate
  5. Bring to a boil over medium heat, at which time the consistency should thicken significantly.  Remove from heat
  6. Whisk egg yolks in a glass bowl.  
  7. Pour in half of the chocolate mixture slowly while continuing to whisk.
  8. Pour the egg-chocolate mixture back into the sauce pan with the remainder of the chocolate mixture.
  9. Bring to a boil again.
  10. Remove from heat and stir in 1 Tablespoon vanilla extract.
  11. Pour mixture into the baked pie shell.
  12. Put plastic wrap on the surface of the filling and refridgerate for 4 to 48 hours.
  13. Remove plastic wrap and serve with whipped cream and strawberry slices on top.
